Do you like leche flan? As for me, I do like it if it's not that too sweet. I have tasted the best leche flan ever as being baked by my friend R. She said her secret is using organic ingredients. Ooh that was so yum-o!  Anyway, if you do like doing it, here’s how to make leche flan. It’s very easy I tell you.

INGREDIENTS:
  • 9 egg yolks (beaten) 
  • 1 condensed milk 1 evaporated milk
  • 1 tsp vanilla Caramel
  • 1/4 cup brown sugar 
  • 2 tbsp water

 PROCEDURE: 
  1. Mix the beaten egg yolks, condensed milk, evaporated milk & vanilla together. Set aside. 
  2. Caramelize brown sugar and water by placing the two ingredients in a pan. 
  3. Turn on the stove to medium heat. 
  4. When it gets thick & becomes dark brown in color, spread the caramel evenly on the flat side of the mold (llanera or any shaped container). 
  5. Wait for about 5 minutes to cool down before pouring the egg yolk mixture. 
  6. Transfer to a steamer. Cover the molds with an aluminum foil. 
  7. Steam for 30-45 minutes. (Steaming time depends on the size of the mold or container.) 
  8. Remove from steamer. 
  9. Refrigerate after the temperature cools down.

Makes me want to have bites of these desserts right now. If only I have taken this picture now, I then would not crave for this. Ah ha! These cooked ripe banana plantains and that as what you can see. Ooh my goodness foodies --- come to me right now. Ha ha! It is cold and had been raining cats and dogs a minute ago and now it's cloudy. I just give you a hint of why I am craving to eat foods and more foods right. If only my terrible-two stage daughter would eat as her mom, I could then have a partner in my food trip. Ooh well, I cannot wait of the time that she eats as voracious as I am and wishing that time too that I won't get fat, since we will also going to exercise or burn calories together. Isn't that an awesome day-dreaming? Ha! Okay, you can bite me now to stop me from talking afar. Oops! I just need that cooked sweetened taro root I cooked yesterday now, right now (ooh well, in lieu of in that picture below)!

I don't know if you're familiar with bokchoy vegetable, it has a green leaves and white stems. And so I missed having a soup like this. I had this picture way, way back then. I don't know how many months ago but it's not that a year yet. Ha ha!

Cooking this soup is easy-peasy. I usually had soups with a fried fish strips. Yes, as in I stripped a fried fish into tiny pieces, and I called it fish little strips. :-)

Okay, you wanna know the ingredients? Simply are: chayote squash, bokchoy, fried fish turned into tiny strips, spices (bell pepper, garlic, onion), a tablespoon cooking oil, water, pepper and salt to taste. I think you know already how to make a soup with a cooking oil. If not then, here it is:

Procedure:
  1. Assuming you already done cutting the chayote squash and bokchoy vegetables into length-wise then then wash and set aside. Also strip-off the fried fish into tiny little pieces. Hit up a tablespoon of cooking oil in a pan then put the pieces of garlic and onion then 15-30 seconds after, put the bell pepper together with the garlic and onion heated-up, let it brown.
  2. Then put  three (3) cups of water.
  3. Once boiled, put the vegetables. Then let it reboil.
  4. Put then the fried fish tiny strips. 
And done! Time to eat! :-)

This picture (below) was taken way back year 2011 in the month of May, with my three friends in the city (one is nearby where this picture or the place where her house was taken). That was already  more than two years ago. We Filipino "Pinoy/Pinay" mommies, living legally here in USA with an American husband) had our friends bonding that time. It was fun. We can just remember our birth country, the foods we used to eat. Ooh well. Isn't that awesome that we can still access to these foods even of thousand miles away? That's how lucky we are that we live here in California than any other states, when it comes to such foods, as they say.


Do you recognize these foods? Those are little fish omelet (tortang-isda), two different kind of fried dried fish, sauteed bamboo shoot with malunggay "moringa" soup, boiled ripe banana plantain, rice and sweetened root crops with bilo-bilo (or commonly called as "bilo-bilo" or "binignit" ) for the dessert and soft drinks.
